1. What exactly is yogurt?

Yogurt is a cultured milk product, made by adding "good" bacteria to milk. These "friendly" cultures, L. bulgaricus and S. thermophilus, are what give yogurt its special properties. Similar to the making of beer or cheese, special organisms ferment and transform the milk sugar (lactose) into lactic acid, creating the dictinctive properties of yogurt. This process has been around for at least 4,000 years.

2. What are the benefits of yogurt?

Many people eat yogurt for its health benefits, because yogurt is more than delicious and nutritious. Yogurt with live and active cultures can:

• Increase digestibility of dairy products for individuals suffering from lactose malabsorbtion (lactose intolerance)
• Results in overall improvement of digestive function
• Stimulates the immune function

3. What makes Luna Blu's frozen yogurt so special?

Not all yogurt is created equal. The yogurt available at Luna Blu is put through a rigorous process which results in a "friendly" bacteria count of over 1 billion per gram of yogurt for some flavors. Not all frozen yogurt companies produce and sell products that contain actual yogurt or that have high levels of live and active cultures.

In some cases there is no fermentation process and freeze-dried cultures are simply sprinkled" into the frozen yogurt mix. For others, the product may be pasteurized after culturing. This may extend the shelf life but it destroys the cultures.

This is why the integrity of desserts claiming to be frozen yogurt cannot be assumed and the reason why Luna Blu took great care in selecting a product endorsed by the National Yogurt Association.

The National Yogurt Association requires frozen yogurt to contain 10 million cultures per gram at the time of manufacture. As you can see, the frozen yogurt offered at Luna Blu contains much more than the minimum required (most flavors contain more than 400 million cultures at the time of manufacture) .

4. Is Luna Blu yogurt Lactose Free?

Luna Blu offers lactose-free sorbet flavors for those of you who are lactose intolerant or do not consume dairy products.

5. Does Luna Blu frozen yogurt contain gluten?

No. All of the frozen yogurt and sorbet products offered at Luna Blu are Gluten Free.

6. Is Luna Blu frozen yogurt kosher?

Yes. The frozen yogurt available at Luna Blu is Kosher certified.
